If you love the garlic spread from Zankou chicken, now you can make it at home and even better! Toum which translates to garlic in Arabic is delicious with shawarma or to make a white sauce inspired by halal carts.

INGREDIENTS
-1 cup fresh garlic cloves
-3 1/2 cups canola oil
-2 teaspoons salt
-1/3 cup lemon juice

DIRECTIONS
1. To a food processor, add the garlic cloves and salt.
2. Pulse until it becomes a fine paste. Make sure to stop and scrape the sides down once or twice and pulse again to ensure it becomes a paste.
3. Then take 1 cup of canola oil and thinly stream it in very slowly while the food processor is on to emulsify it. To help with this step, take a paper cup and poke a small hole through. Add the oil into the cup so it can stream out as a small thin line. The spread should already appear thick after adding the first amount of oil.
4. Once 1 cup of oil is added, then add about 1 to 2 tablespoons of lemon juice and process until incorporated. Repeat the process of adding the oil and lemon juice alternately until it is all added.
5. Transfer the toum to an air tight container and store in the fridge until ready for use.

INGREDIENTS:
– 2 pounds chicken thighs, boneless & skinless (can be swapped with beef or lamb)
– 1/4 cup olive oil
– juice of 2 lemons
– 1 tablespoon garlic minced
– 2 tablespoons allspice
– 1 tablespoon coriander
– 1 tablespoon paprika
– 1 tablespoon cumin
– 1 1/2 teaspoon salt to taste
– 2 teaspoons sumac
– 1/2 teaspoon black pepper
– 1/4 teaspoon turmeric
– 2 tablespoons oil for frying
– large flour tortillas or bread of choice

  3. I tried this but it came out liquified. Not a paste. What did I do wrong? I added both the canola oil and lemon juice in a small fine stream.

  7. do you know how much garlic you use in g/oz?? don't want it to end up spicy!

  8. Why would you take the tube, meant for pushing items into the machine AND adding oil to emulsion mixes, out and replace it with a paper cup? Even the cheapest food processor has this feature. That’s why there’s a hole in the bottom of the tube.
