Ingredients:
o jumbo pasta shells – 41 pcs
 Pasta Sauce:
o pasta sauce – 2 cups
o chili flakes – 1 tsp
o chili powder – ½ tsp
o cumin powder – ½ tsp
o oregano – 1 tsp
 Filling:
o oil – 2 tbsp
o chopped onions – 1 cup
o chopped garlic – 3 cloves
o chopped spinach – 10 oz
o ricotta cheese – 28 oz
o shredded mozzarella cheese – 1 cup
o parmesan cheese – 1/2 cup
o egg – 1 pc
o nutmeg powder – ¼ tsp
o salt – ¼ tsp
o black pepper powder – ¼ tsp
o chopped cilantro – 1 tbsp
 Garnish:
o shredded mozzarella cheese – 1 cup
o parmesan cheese – 2 tbsp
o chopped cilantro – 1 tbsp
Instructions:
1. Boil pasta shells (41 pcs) for nine mins uncovered.
2. Sauce: pasta sauce (2 cups), chili flakes (1 tsp), chili powder (1/2 tsp), cumin powder (1/2 tsp), and oregano (1 tsp).
3. Filling: oil (2 tbsp), chopped onions (1 cup), chopped garlic (3 cloves), chopped spinach (10 oz), and set aside.
4. In a bowl, add ricotta cheese (28 oz), shredded mozzarella cheese (1 cup), nutmeg powder (1/4 tsp), salt (1/4 tsp), black pepper powder (1/4 tsp), parmesan cheese (1/2 cup), chopped cilantro (1 tbsp), egg (1 pc), and mix well.
5. In sheet pan, using a pipping bag or spoon, fill pasta shells with spinach ricotta filling.
6. In baking dish (might need 2), spray oil and pour pasta sauce (1 cup) and spread evenly.
7. Put stuffed shells in baking dish.
8. Pour pasta sauce over stuffed shells, sprinkle shredded mozzarella (1 cup) and parmesan cheese (2 tbsp), then cover with foil.
9. Bake at 375° for 30 mins with the cover and 15 mins without cover.
10. Garnish with chopped cilantro (1 tbsp).
