RECIPE (gluten free, dairy free friendly*):
for the meatballs:
-1 lb ground turkey (i used 93% lean)
-1 egg
-1/4 cup diced red onion
-1/4 cup chopped parsley
-1/3 cup almond flour
-3 cloves garlic, minced
-1 small zucchini, grated & liquid squeezed out (yields about 1 cup after squeezing out the moisture)
-1/2 tsp dried oregano
-1/2 tsp dried mint (don’t stress if you don’t have it!)
-salt + pepper
for the tomato cucumber salad:
-2 mini cucumbers, sliced & then halved (about 2 cups)
-1/2 lb cherry or grape tomatoes, halved
-1/8 cup diced red onion
-2 tsp red wine vinegar
-salt + pepper to taste
for the homemade tzatziki:
-1/2 cup plain, full-fat greek yogurt *sub a thick, dairy free yogurt
-1/2 tsp dried dill
-1/2 mini cucumber, shredded & liquid squeezed out (yield about 2 tbsp after squeezing out the moisture)
-juice from 1/2 lemon
-1 small garlic clove, minced
-splash of olive oil
-salt + pepper to taste

combine all turkey meatball ingredients in a large bowl. set aside in the fridge for 10-15 minutes. meanwhile, prepare the tomato cucumber salad by adding all ingredients to a bowl and tossing until combined. scoop out about 2 tbsp of the turkey meatball mixture and roll into balls (it will make about 16-18 meatballs). air fry at 400F for 10-12 mins or until done through. while they’re cooking, prepare your right rice according to package directions and mix together all tzatziki ingredients in a small bowl. plate enjoy 🙂
