Ingredients

1 medium red bell pepper (capsicum)
2 cups cooked chickpeas
¼ cup olive oil + for brushing + for drizzling
3-4 garlic cloves
Salt to taste
2 tbsps tahini
Red chilli flakes for garnish
Grilled pita to serve

Method

1. Brush some olive oil on the red bell pepper and roast over direct heat till it is done from all the sides.
2. Place the roasted pepper in a bowl of water and peel the skin. Roughly chop.
3. Put chickpeas in a food processor, add garlic, salt, ¼ cup olive oil, chopped red bell pepper and tahini and process to a smooth mixture, scraping the sides occasionally.
4. Transfer the hummus in a serving bowl, drizzle olive oil and garnish with red chilli flakes. Serve with grilled pita.
