Peach Cobbler Ingredients:
4 pounds (1.8kg) fresh firm but ripe peaches, halved, pitted, and cut into 1⁄2-inch wedges, or thawed frozen sliced peaches
3⁄4 cup packed light brown sugar (5.8 oz / 165g)
1 tablespoon cornstarch
1 1⁄2 teaspoons ground ginger
1⁄2 teaspoon ground cinnamon
1⁄4 teaspoon ground nutmeg
1⁄2 teaspoon Diamond Crystal kosher salt or 1⁄4 teaspoon Morton kosher salt
3 tablespoons fresh lemon juice
2 teaspoons vanilla extract
All-Purpose Drop Biscuit Dough
(page 336), formed into biscuits and chilled
Heavy cream, for brushing and serving Demerara sugar, for sprinkling

All-Purpose Drop Biscuit Dough
1⁄3 cup sugar (2.3 oz / 66g)
1 teaspoon finely grated orange or lemon zest
3 cups all-purpose flour (13.8 oz / 390g), plus more for the surface
4 teaspoons baking powder
11⁄2 teaspoons Diamond Crystal kosher salt or 3⁄4 teaspoon Morton kosher salt
1 1⁄2 sticks unsalted butter (6 oz / 170g), frozen
1 1⁄2 cups heavy cream (12.7 oz / 360g), plus 1⁄2 cup (4.2 oz / 120g) if making drop biscuits, chilled

  6. i made this with blueberries and it came out soooo good. Biscuits were super fluffy. Made it with frozen mango and peaches and i think i may have added to much cream. Still good but definitely more dense.

  7. I really appreciate how Claire is so conscious of home cooks and what is necessary and what is for added flair. The constant mention of “no need to clean the whisk or bowl” “frozen is also fine” etc and even her comment “that was really important to me” really touches me. She cares a lot about making dessert and food accessible 🙂

  10. have you ever tried fruit pectin or gelatin as a thickener? also wondering if you've ever cooked a batch in the smoker, a light smoke.. steven raichlen cooked a peach cobbler in the smoker said it was the knee's, but his recipe was no where near the perfection yours is so I bet this would be crazy cooked in a smoker, nota heavy smoke a light smoke, wanna try a pineapple upside down as well, maybe an apple.. looks so good as is.. I'd have to make some my home made vanilla, I picked up a small bottle of this vanilla paste, its basically the bean scraped out and put in a jar, wow does it really make a nce vanilla ice cream.. cobblers must have vanilla ice cream a good ice cream.. oh boy

    my only issue is that I am alone so I generally cannot finish a batch of anything a small batch of cookies and they end up hard as rock before I can get to them.. can this be frozen after baking or can I make smaller batches in smaller pans then vacuum seal and freeze? pop in oven as I go.. I just cannot finish a cake or a pie, unless its a sweet tater then no problems there as I use less sugar… "-)

  12. I made this exactly as written/explain with one addition. Because I am from the south, I added one stick of butter to the baking pan and put in the oven to melt. Then put in the peaches. It was delicious. The butter did not alter Claire’s excellent recipe.

  16. Hi Claire. In discussing thickeners with a pie maker, she suggested using Tapioca instead. This might be something you could use in place of corn or potato starch. Just a thought.

  19. Will love to make this and as a pie baker for 30 years, I always think it’s a travesty when people want ice cream on top of my pies. My hubby and I disagree on this. A pie, cobbler, etc etc are delicious and sugary enough on their own; however, I will try cold unsweetened cream!
