Ingredients
for 4 people
320 grams of rice for Risotto (Carnaroli, Arborio)
Vegetable broth
2 Artichokes
200 grams of sausage
Salt pepper olive oil
parsley, 1 onion

Before the risotto ….
First make the vegetable broth with half an onion, a carrot, 1 celery, a bay leaf.
Boil 30 minutes.

In a saucepan, put half a chopped onion.
A little olive oil, we turn on the stove.
We clean the artichokes as I show you in the video.
To make this risotto if you want you can also use frozen artichokes, they are very good.
Cut the artichokes and add them to the onion.
add half a glass of water and cook until the water has dried.
Add the skinless sausage to the risotto.
Cook together with the artichokes for 10 minutes.
Now add 4 cups of rice for risotto, 320 grams, and heat well.
Add a glass of white wine to the risotto and let it dry well.
Now pay attention !!! you have to cook the risotto with a little broth added a little at a time for 15 minutes.
When it is cooked, remove the pot from the stove, do not let it overcook.
The risotto must not be too dry.
