Ingredients
500g carrots, peeled
500g parsnips, peeled
2 tbsp olive oil
4 tbsp clear honey
2 tbsp wholegrain mustard
4-6 sprigs thyme
Method
1. Preheat the oven to 220˚C, gas mark 7. Place a roasting tray in the oven to heat up.
2. Meanwhile, slice the carrots and parsnips lengthways into halves or quarters so that they are evenly sized.
3. In a large bowl, whisk together the olive oil, honey and mustard. Add the vegetables and thyme to the bowl and toss to coat.
4. Place on the hot tray and roast for 30 minutes until the vegetables are tender and caramelised.

Would have been easier to put the parsnips and carrots in with the glaze, much less mess and easier cleaning.

The vegetables has been steamed not properly roasted need a big roasting tray and spread them.

Thing is mustard is a allergy
I tried this recipe last year and it was really good. I did par boil the veg beforehand because I'm quite traditional in my tastes and I prefer it than roasting from raw but the flavours were perfect. I forgot to buy mustard this year so I'm going to wing it with a bit of Coleman's mustard powder instead. It won't be as good as the original recipe but hopefully it will add enough of a kick to it.
Anyone cooked it without the mustard?
Did you change the roasting tin half way through? The initial one looks stubbier and shorter and the veg is stacked up, when you take them out of the oven it looks like a shallower and longer tin. Which is essential btw, you need them spread out not bunched up or they'll steam not roast.

I made this to go with Christmas dinner 2022 and it was delicious – everybody loved it! I'm making it again tonight to go with hamburger steak, peppercorn gravy and garlic mashed potatoes – yum! So happy I clicked on this recipe!
