  1. Chef John, I usually love your recipes, but this much sugar into a cake? Seriously? You've got almost as much sugar as you've got flour.
IMO apple recipes rarely require any sugar at all because apples are sweet in and of themselves. Maybe a tablespoon of honey if you want to sweeten it up.
But almost 2 cups of sugar into a cake this size plus the natural sweetness of the apples makes this inedibly sweet for me. Do you even taste any flavors except sugar in that cake?

  6. I’ve made this a number of times and it’s always a hit. It seems so simple, and I think that’s the beauty of this recipe. As with all of Chef John’s recipes I’ve tried to date, the results are consistent. Highly recommend!

  7. This guy sing songs this whole recipe! His singsong speech is very very unusual! Almost can’t listen to his directions due to his singsong delivery!
Easy to imitate once you recognize his tempo!

  8. About 3 years ago I found this recipe and made it in October just after picking up a huge bunch of apples from our favorite orchard. My family made me make it every week that month, and it has been our October tradition ever since. Thank you so much for sharing this recipe Chef John, it's amazing!
