My greatest tip for the perfect Guacamole is to seek out a local independent store that makes and sells tortillas, otherwise making them yourself would be another great option. Either way, you will have some amazing guacamole just make sure to show some love to the tortilla chip itself.

Guacamole full recipe:
4 medium Haas Avocados
1/3 bunch cilantro finely chopped stalks included (save a little for garnish)
1/4 yellow or white onion small to medium dice (save a little for garnish)
4 large cloves or 6-7 medium cloves of garlic microplaned
1 1/2 limes juiced (maybe 1 if extra juicy and up to 3 if very dry)
1 1/4 tsp Maldon salt
1 tbsp avocado oil

  1. I wonder how they get oil out, of an avocado? I have eaten many avocados, and I usually add oil. So where are the avocados hiding, the avocado oil? In the seed?

  4. I used to think Don Pablo’s (a Ameri-Mex sit down) hot salsa tasted like soap, because their mild salsa did not have the cilantro taste. I thought the dish was not washed and rinsed properly or something. Now I love cilantro and it does not even taste like soap anymore.

  5. Another way to avoid watering the guac down (If tomatoes are desired) just slice the tomato and cut out the very inner part where the seeds are stored ( the endocarp). This is the part that holds the juice of the fruit. ( save this part for making tomato juice or pasta sauce). Use the outer part for the guacamole. Great video…

  9. Not only do I agree with excluding tomatoes because of the water in them I think I noticed they harm the flavor of the avocado. I used to use them and noticed a perfect tasting avocado become bad as if it was old or oxidized. I don’t know if it’s a chemical reaction or something but started ditching the tomatoes and now always getting a perfect guacamole.

  13. Many many many years ago my mom tried sticking the knife in the seed to get it out. Problem is, she was not very smart. She used the POINT of the knife. It glanced off the seed, went through the avocado and then clean through her hand. I assume that is not the recommended method. I prefer your method that does not require a trip to the ER.

  16. Tomatoes in guacamole is gross. Good for you for not adding them. Once you do, the whole thing ends up tasting of tomato. The one thing you should add is either jalapeño or Serrano chilis.

  18. Wow. Thanks to the info about disliking nasty ass cilantro not being a choice. Other than the Irish Spring you put in, the Guac looks amazing! As you now live in Texas, HEB has great fresh tortillas all the time that they cook right in the store. Best grocery store EVAR!

  19. No tomatoes? That's guacamole heresy! I'm with you on the chips though. There's a taqueria near me that makes their own and they also put this chili pepper seasoning mixture on it that is delicious. The place make delicious tacos (mmmm Birria tacos), but I really go there mainly for those chips.
