Bakoula or Khoubiza:  A delicious dish of cooked mallow in spices.  This is a dish I NEVER thought I would be able to make authentically at home as mallow can be hard to find in the US.  I found some at an Arabic store outside of Chicago and couldn’t wait to get home to make this recipe! ⁣

Ingredients:⁣
1lb khoubiza (Mallow) or Spinach⁣
3 cloves of garlic, minced⁣
6T olive oil⁣
1/2c cilantro, chopped⁣
1.25t teaspoon ground paprika⁣
1.25t teaspoon ground cumin⁣
1/4t cayenne (optional for some heat) ⁣
1/2 preserved lemon, pulp separated from rind⁣
2T lemon juice ⁣
Salt to taste⁣
Purple Moroccan Olives, for serving ⁣

Instructions:⁣
Prepare Khoubiza leaves by thoroughly washing to remove any dirt.  Dry and remove lower portion of the stems.  Finely chop upper steams and leaves.  Place in a steamer basket and steam for 15-20 minutes until very tender.  ⁣

Heat the olive oil and garlic in a large skillet until fragrant.  Add cilantro and spices and cook over low heat for 5 minutes, ensuring garlic does not burn.⁣

Add the khoubiza along with chopped preserved lemon pulp and lemon juice.  Cook for 10-15 minutes, mashing with the back of your spoon until the khoubiza is broken down and the mixture is homogenous. ⁣

Taste and adjust the seasoning if needed. Add more salt or spices according to your preference.⁣

Remove from heat and let rest before serving to let the flavors combine.  Garnish with preserved lemon peel and olives.  Serve with crusty bread and enjoy! ⁣
