This is the Second Video About the asparagus .. this time it’s the white asparagus and I am going to make a risotto with white asparagus … risotto is a creamy rice meal that is made famous by the Italians
The right way to make risotto is with no cream no butter just like the Italians.. the starchy rice and the parmesan will make it creamy enough
I’m using arborio rice which is available everywhere but if you find carnaroli you could use that too
Also, you could use a different vegetable if you like … this is a basic recipe I will do a more complicated risotto in the future videos

The Recipe
175 g Arborio Rice
300 g White Asparagus
100g Shallots or Sweet white onions
125 ml Dry White wine
600 – 1000 ml of stock depending on how your rice absorbs the water
8 g Garlic
1 TSP Truffle paste optional
30 g Parmesan
30 g Pecorino
Sea Salt to taste ( if Your Using Pecorino add salt after adding )
Cracked Black Pepper (Optional )
