Risotto is a delicious Italian rice dish made from simmering rice on the stove top. The intense heat from the liquid helps the starch release from the grain which make it very creamy.

It looks intimidating but in actuality, it is very simple as long as you use the 3 to 1 ratio of liquid to rice and stay in the three step process explained in the video.

2 cups chicken stock
1 cup tomato sauce
1 cup Arborio rice
8-10 ounce od cherry or grape tomates
1 medium onion
1 4oz packet of pancetta
3 cloves of garlic
5-6 leaves of basil
1/2 cup white wine
1 cup grated parmesan cheese (parmesan reggiano if possible)
salt and pepper to taste
