American Cuisine – Tuna Salad in Cucumber Cups

This delicious appetizer tuna salad is inspired by Jenn Laughlin – Peas and Crayons.
I customized Ingredients and are as follows
1 English cucumber
1 Tbsp of Yogurt, Mayo and Yellow mustard each
1 tsp Onion , garlic , Paprika powder each
10oz tuna total
1 handful of mixed spinach and arugla (just baby spinach fine too)
1-2 scallions sliced
1/2-1 cup of sliced cherry tomatoes
Salt and Pepper to taste
