Prep Time: 20 minutes
Cook Time: About 40 to 45 minutes (depending on your oven)
Serves 6 people

INGREDIENTS:

6 portobello mushroom caps, rinsed, stems and skin removed
1/2 lb. lean (at least 80%) ground beef
1/2 lb. ground Italian sausage (You can also use spicy Italian sausage for more taste).
2 eggs
1 cup cooked rice
Pinch salt (or to taste)
Pinch pepper (or to taste)
3/4 cup shredded mozzarella cheese (3 oz)
2 Tbs. butter

INSTRUCTIONS:

– Have 1 cup of cooked rice ready.
– Preheat the oven to 400°F.
– Rinse and remove the stem and skin of the mushrooms
– Place them in an oven dish.
– In a large mixing bowl, combine the beef and pork, the cooked rice and the eggs.
– Add salt and pepper to taste and mix with your hands
– Top the mushrooms with the beef/pork mixture.
– Add cheese and butter on top.
– Bake for 40 to 45min or until the cheese is golden.
