Homemade Caesar Dressing + Shrimp Caesar Salad

For me, fresh made salad dressing is one of those things that takes a little bit of extra effort but is totally worth it. This Caesar dressing only takes ~5-10 minutes but you can absolutely taste the difference and it makes the salad so much better.

Ingredients/Cost:

Dressing
6 anchovies (packed in oil): $1.50
1 tsp oil from anchovy jar
1/2 lemon: $0.25
1/2 tsp Dijon mustard: $0.05
2 tbsp mayo: $0.20
1/2 tsp worcestershire sauce: $0.05
1 tsp garlic powder: $0.05
1/4 tsp crushed red pepper: $0.05
1/4 cup freshly grated parmigiano reggiano: $0.65

Salad
1 lb peeled and deveined shrimp: $14.00
1 head romaine lettuce: $3.50
2 tbsp oil: $0.10
1/2 lemon: $0.25
2 cups croutons: $0.20
Salt/black pepper: $0.05

Total cost: $2.80 (dressing) + $18.10 (salad) = $20.90 for 2-3 servings

Directions:

Dressing: ~5-10 minutes, serves 2-3

1. In a large bowl combine the anchovies, oil from the anchovy jar, lemon juice & Dijon mustard. Use a fork to mash up the anchovies and a whisk to combine the ingredients. Then add the mayo, worcestershire, garlic powder and crushed red pepper and whisk again to combine. Finally, grate the Parmesan into the mixture and give one more whisk.

Salad: ~30 minutes, serves 2-3

1. Place the shrimp in a bowl and add the lemon juice, salt & pepper. Let marinate for ~15 minutes.

2. While the shrimp marinates, chop the romaine into bite sized pieces and remove excess moisture with paper towels. Measure out the croutons, or you could also make your own at this point by cutting up some bread, seasoning with oil/salt/pepper/garlic, and baking for ~10 minutes at 350F.

3. Place a large pan on the stove over medium to medium high heat. When the pan is hot, add the oil. Pat the shrimp dry with paper towels and then add to the hot oil. Cook for ~1-2 minutes each side (or more depending on the size of the shrimp) and then remove from the pan once fully cooked and allow to cool a bit.

4. While the shrimp cools, add the chopped romaine and croutons to the bowl of dressing and toss to combine. Serve with some more grated Parmesan and the shrimp.
