Jerry and I discovered this fried green olives and almond appetizer in Napa Valley a few years back. When you make these, make A LOT of them because they are crazy addictive. We could not stop eating them!!!
I still can not remember the name of the restaurant. So Please, if this rings a bell, leave the name of the place below in the comments. I would LOVE to go back. I think it was fairly close to DARIOUSH winery because we met the owner there (he was sitting 2 tables over) who told us about his winery. We went there after lunch and really enjoyed their wine and ambiance.
But I digress… back to how to make this fried olives and almonds recipe.
Heat vegetable oil to 450F – Dang! that’s hot! Yep, this is a flash fry. We’re not worried about cooking chicken to the bone. These fry up fast! I’ve fried these in oil heated to 350-375F and they’ve crisped up great, they just need a bit longer.
Stuff the olives with pesto and dunk them in egg whites.
Then roll them in cornmeal making sure they’re completely covered.
Fry them for 1 -2 minutes or until they are golden brown and delicious! Place them on paper towels to remove the excess oil.
Gently roast skinned Marcona almonds in a dry skillet. I like to use Trade Joe’s rosemary Marcona almonds! Divine!
Mix these two together and serve warm.
Note: I think the restaurant stuffed their olives with an anchovy mixture. That was excellent, but like I said… I like to eat A LOT of these and I can eat soooo much more pesto than I can anchovies. 😆

Awesome! I buy Almond Stuffed Olives for Martinis but these look and sound amazing! Funny thing is I don't really like the actual taste of green olives but for some reason when they are combined with almonds I really enjoy them. Thanks for the video.
