Here is a favorite family recipe to share with you. It’s meatless and incredibly satisfying. The artichokes are delicious hot or cold the next day.

Ingredients:
4 medium to large artichokes
1 C plain bread crumbs
½ C Italian parsley, finely chopped
½ C black olives (e.g. kalamata), finely chopped
¼ C aged Italian cheese such as Romano, grated
salt and pepper to taste
2 garlic cloves peeled and halved
olive oil – to drizzle on stuffed artichokes
2 C fresh peas (frozen are okay)
