Ingredients:
►1 yellow bell pepper
►1 red bell pepper
►4 plum tomatoes (or 6 cherry tomatoes)
►4 sun-dried tomatoes
►15g capers
►15g pine kernels
►1 garlic clove
►salt and pepper to taste

Ingredients for the dressing:
►75ml olive oil
►15ml balsamic vinegar
►1 bunch fresh herbs (any favorite)
►1 tbsp lemon juice

🔪 Utensils and equipment

►bid serving plate
►non stick frying pan

👩🏻‍🍳 Preparation

1. Slice in quarters the peppers and remove the seeds and the core
2. Fry the peppers on medium heat until they have become dark brown and charred throughout.
3. Fry for about 7 minutes and transfer to a bowl by covering it and let it rest for 20 minutes (this helps to tender the peppers)
4. While the peppers are resting, slice in quarters the tomatoes
5. Cut slices the sun-dried tomatoes
6. Prepare the dressing: in a small jar, place all the wet ingredients and give them a good shake
7. Finely chop the herbs and the garlic and set aside
8. After the peppers are rested, remove the skin and cut into 0.5cm thick slices
9. To assemble the salad, place all the ingredients on a large plate and pour the dressing on top
10. Enjoy!
