Garlic-Parmesan Roasted Cauliflower

This Garlic-Parmesan Roasted Cauliflower is a short-cooking, easy-to-make recipe that is perfect for a healthy meal. Serve it as a side dish or as part of a meal.

[Ingredients]

1 medium head of cauliflower, cut into small florets
3 Tbsp. extra-virgin olive oil
3 garlic cloves, roughly chopped
1 1/2 tsp. paprika
3/4 tsp. kosher salt
1/2 tsp. cracked black pepper
2 to 3 Tbsp. grated Parmigiano Reggiano cheese
Juice of 1/2 lemon
2 Tbsp. finely chopped fresh parsley

[Instructions]

1. Place a large rimmed baking sheet in the center rack of the oven. Preheat oven to 450°F. (230°C)

2. Place cauliflower florets in a large bowl. Toss with olive oil, garlic, paprika, salt, and black pepper. Empty out onto preheated baking sheet, spreading in an even layer. (Note: avoid overcrowding the pan, which will inhibit optimal browning.) Bake for 25 minutes, tossing once after 15 mins.

3. Remove from oven and sprinkle cauliflower with cheese. Place back in the oven for 2 more minutes.

4. Finish with fresh lemon juice and parsley; toss and serve.
