  2. Nice job and presentation. I'm doing St. Louis spares, Memphis-style Rendezvous dry baby-backs, and a huge Boston Butt for the 4th this year. We'll be on top of a mountain at a friend's palatial spread, watching all the fireworks displays in the towns down below….minus the noise. I've been doing this for around 50 years now, and think I've got things down to science. The rest is very important. If you get in a hurry and just tear into the butt w/o a significant rest in a cooler, you are guaranteed to have dry pulled pork. I mop my wet ribs with some diluted Wickers and glaze at the end with homemade BBQ sauce mixed with some Maggi flavor enhancer, which adds a slightly spicy pop. Mustard slaw tops off the sandwiches.

  3. FAM, try marinating it in sweet red wine, I like sangria, then cook in the crock pot for 8 to 10 hours on low.
    It will be so delicious and juicy, it just falls apart and melts in your mouth!

  4. This is what I’m doing right now. It’s July 4th 🔥 but I placed my butt in the smoker last night 11:30pm and let if smoke all night at 200F for 8hrs. Getting ready to wrap and continue.

  6. Did you keep the temperature at 250 after wrapping and after wrapping how long tell it reaches 203, so I'm not opening the bbq every 10 mins lol
