In this video, I will show you how to make the great side dish, stuffed portobello mushrooms.

Ingredients:
1 tsp olive oil
1 tomato
2 red bell peppers
1 garlic clove
4 oz mozzarella cheese
1 cup panko breadcrumbs
2 tbsp chopped chives
1/4 tsp salt
1/4 tsp pepper 4-6 portobello mushroom (depending on the size)

  7. If you're not a vegetarian, add cooked bacon to your stuffing mixture. Hickory smoked bacon adds so much more flavor to stuffed Portobello mushrooms.
