Join Amy as she makes her Easy Chicken Salad. This chicken salad is made from boneless, skinless chicken breast that is cooked in the Crockpot or slow cooker. It has onion, celery and can be seasoned a number of different ways. I used tarragon in this chicken salad. You can also add grapes, pineapple, olives, or anything else that you like. This is a great chicken salad to use as a Chicken Salad Sandwich or to eat with crackers or in a lettuce cup. Enjoy! Please share!

  1. It does seem easy if you plan ahead and want the flavor of the chicken to cook in. What's hard cooking chicken in a cock pot for 8 hours, let it cool over night, the rest is simple. If you want fast, then buy a can of chicken. Thanks' Amy, going to fix this today.

  2. Slicing pickles thin and then mincing it with a knife, and mixing that into the salad (maybe instead of the pepper, depending on the taste) makes it taste better, and take some of the greasiness away.

  3. Any leftover poaching liquid is transferred to a saucepan then boiled down to a few concentrated spoonfuls and drizzled over the cooked chicken. I don't waste the poaching broth bec it's well-flavored and salts the meat too.

  5. Hi Amy.. great post. I love this type of salad. I like to bake or grill my chicken; crock of pressure cooker sometimes. I prefer the taste of the baked or rotisserie chicken. In a pinch Costco but I really prefer to cook my own chicken. So some of my mix it up items: crispy apple, toasted (or slightly candied) pecans, dried cranberries and thinly sliced celery…maybe a little red onion tiny dice. Just found your channel and love your presentation. Thank you.

  8. 8 hours nope way too long. I would use pressure cooker instead for me, I am not suggesting just stating my preference.

  9. This is my first time watching any of your videos but it is exactly how I make my chicken salad, except I’ve never tried tarragon in it before. For those haters that are laughing at 8 hours on low in the crock pot, this is a great way for working people to do it. Put in on before work and when you get home, finish it for dinner. It cooks the chicken slowly while you work and it’s juicy. Of course, there are other ways but this is a great idea for people on the go. Thank you for sharing.
