Pickled Turnips (Makes 2 Jars)
Ingredients:
4 to 5 medium size turnips
1 medium size beet
2-3 cloves garlic
3 tbsp canning salt (You can also use kosher salt)
1 1/4 cup white vinegar
5 cups water
2 Sterilized jars

Instructions: In a medium saucepan, mix the water, vinegar and salt. Bring it to a boil until the salt is completely dissolved. Peel and cut turnips and beet approximately same size pieces. Chop garlic to big chunks. Place chopped garlic at the bottom of the jar, fill the jar to the top with turnips adding slices of beets in between. Fill the hot brine to the top leaving 1/4 inch from the top and make sure all the turnips and beets are covered with the liquid. Put the lid on and let it cool completely on the the countertop then transfer it to the fridge and its ready in 5 days. Enjoy!
