Spiced Pumpkin Bread is the perfect Autumnal treat, its simple and stress free to make and a great to bake with a loved one on a chilly Autumn day. This lightly spiced sponge is packed full of delicious Pumpkin puree which is available in a can OR you can make your own using an actual pumpkin (or a butternut squash). You can leave the Pumpkin Bread plain or add all sorts of additions such as Chocolate Chips, Nuts or Dried Fruit. You can also serve it in many ways; you could ice it with cream cheese frosting like Sally, or follow Jemma’s lead by toasting it in a pan of sizzling butter, YUM!

Preheat Oven to 175C
2 lb Loaf Tin ( but you can also use and cake tin)
315g Pumpkin Puree
2 Eggs
120ml Vegetable Oil
100g Caster Sugar
150g S0ft Light Brown Sugar
1/2 tsp Vanilla Extract
215g Plain Flour
1 tsp Bicarb
1/2 tsp Baking Powder
3/4 tsp Sea Salt
2 tsp Cinnamon
1/2 tsp Ground Ginger
1/4 tsp Nutmeg
100g Additions: Pecans, Choc Chips, Pumpkin Seeds – anything you like!

I made a few chances because I didn't have all the exact ingredients and it was amazing. I used:
60 ml oil
60 ml table cream
100 g soft brown sugar
150g muscovado sugar

I make pumpkin bread every year and banana bread when I have leftover bananas. All the spices are so good with a little butter and warm. It’s the best!

Its actually a variety of butternut squash that is in tinned pumpkin, its not actually pumpkin and its a pumpkin loaf but its caky not like a bread you toast, its usually eaten warm

Being from the states, never had pumpkin bread. Sounds ok. Maybe might try and add cranberries and walnuts instead of chocolate.

I’ve made this a few times now and it always turns out perfect! What a great recipe. I’ve even used gluten free flour with some xanthan gum instead and it was great!

Hi Jemma and Sally, any other options to replace vegetable oil in order to keep the bread moist? I used vegetable oil for other baking but turned out it always tasted weird, so I want to avoid it. Please kindly advise. Thanks 🙏
