Fougasse is a sort of flat bread with toppings from Provence in the south of France; however its origin goes back to ancient Rome. Panis focacius was Roman flat bread which was baked in the ashes of a wood fire

Ingredients:
500 gr wheat flour
½ cup olive oil
(4 tbsp for the dough mix)
7 gr dried bakery yeast
(Or 10 gr fresh yeast)
18 cl water
10 gr sea salt
2 tbsp herbs de Provence
Black pepper mill
Black or (and) green olives
Some grated cheese of your choice
Bacon cubes
Small sliced tomatoes

  1. I love fougasse and I can’t believe more people haven’t viewed this! I’m going to try your suggestion for the blue cheese, walnut and fig as I have not seen that combo before but sounds like a bit of heaven!
