Recipe:
1. Green bell pepper: 1 large, cut in half and seeds and placenta removed
2. Red bell pepper: 1 large, cut in half and seeds and placenta removed
3. Yellow bell pepper: 1 large, cut in half and seeds and placenta removed
4. Eggplant: 1/2 of a large one, peeled & diced
5. Tomato: 5 small ones, peeled & diced
6. Red onion: 1 large, diced
7. Garlic: 5 cloves, finely chopped
8. Fresh basil: About a handful, finely chopped
9. Fresh mint: About a handful, finely chopped
10. Kalamata olives: 2.5 tbsp., sliced
11. Himalayan pink salt: to taste
12. Ground black pepper: to taste
13. Oil for frying

For topping:
1. Oil
2. Bread crumbs: 1/2 cup
3. Coriander/cilantro: About a handful, finely chopped
4. Crumbled feta cheese
