Orecchiette is an Italian pasta that comes from the words “orecchia” which translates to ear in Italian and “ette” which is the plural for small. The name comes from its shape which resembles a small ear and today I’m going to teach you how to make this amazing recipe with Italian sausages and broccoli rabe recipe. Broccoli rabe is also known as rapini. If you love pasta, sausage and broccoli rabe (rapini) together with garlic, Parmigiano cheese and herbs, you’re going to be blown away by this amazing recipe. Ingredients
1 package pasta orecchiette
500g feeds 4-6 people
5 mild sausages
1 bunch of rapini (aka broccoli rabe)
1/2 cup of white wine whichever you enjoy drinking with
1/2 cup Parmigiano-Reggiano
4 tablespoons of olive oil when cooking sausages
4 tablespoons of olive oil drizzled when pasta is cooked
2 teaspoons goat cheese if desired
Salt for pasta
6 cloves of garlic
1 teaspoon of red pepper flakes or Peperoncino as desired
Salmanoia Bolognese * if available in your local grocery store
Herbs
1 tablespoon fresh parsley
2 teaspoons dried oregano
2 teaspoons of dried basil
