Pignoli Cookie Recipe

Yield: 48 – medium cookies

Almond Paste 2.75 lb.
Granulated Sugar 2 cups
Confectioners Sugar ¾ cup
Honey ¼ cup
Vanilla Extract 1 tsp.
Cinnamon, ground 1 tsp.
Egg Whites 8 fl. oz.

Total: 4.5 lb.

Preheat oven: 330 F convection/ 355 F conventional
Method:
• Take almond paste, sugar, and confection sugar and paddle until almond paste breaks down into small pea size pieces.
• Add honey, vanilla and cinnamon next, dough will start to come together slightly.
• Proceed to add egg whites and thin the almond mix until pipable consistency.
• Place mix into piping bag with plain tip and pipe onto sheet.
• Sprinkle pignoli nuts over each cookie to top.
• Place in oven and bake until slight browned around outer edges. Baking times vary, we recommend 10-15 min.

  1. So you made "Fussy" cookies? Yes Pignoli in English means fussy. Pine nuts instead are Pinoli. Every time the lady says pignoli it makes me cringe. Cookies look gorgeous even though I prefer Buddy .

  2. I loved this video and cracked up the entire time. I certainly felt at home when watching it. Thank you for sharing this fabulous recipe. I’m confused though as to how much honey, vanilla and cinnamon are used. Joe uses 1T of honey, cinnamon and I believe Vanilla Extract too but recipe provided is different. Even if you’re making a larger batch on the video -The measurements just don’t add up.

  13. These were a massive hit with my family. I needed to make a big batch. I was a little worried with how soft it got bec of others comments. so I used a little less egg whites & put a tiny bit of flour in. I used some extra cinnamon & let it sit overnight!! They came out soooooo perfect!! They went in the pipping bag without issue!! I’m in love with this recipe !

  15. I remember growing up years ago watching my grandmother make these cookies she was from Naples Italy, and would bake these around Christmas and sometimes Easter. The smell in the kitchen was amazing I was blessed to have grown up in an Italian household great memories.🍰☕
