Greek Quinoa Salad
2 Cups Water
1 Cup Quinoa
Mix water and quinoa. Bring to boil. Cover and reduce heat. Cook 15 minutes. Remove from heat and cool with lid on. Fluff with fork and combine with ingredients below
1 T. Kalmata Olives
1 T. fresh chopped mint (I use a lot more mint)
1 C. chopped parsley
1 C. chopped, peeled cucumber
3/4-1 C. cherry tomatoes cut in half
1/4 C. Feta cheese
pinch of salt
1 T. lemon juice (I juiced a whole lemon)
2 T. finely chopped red onion
