Ingredients:

100g Dry freekeh
400 ml Water
1/2 tsp Salt
1 (140g) Courgette
1 (150g) Beetroot
1 (90g) Onion
1 tsp Cumin
1 tbsp Olive oil
20g Pine nuts
10g Parsley
100g Tomatoes

For the dressing:
1/2 to 1 lemon juice
1 tbsp Olive oil
1/2 tsp salt, black pepper, paprika, onion granules, chilli powder
