These sweet and tangy maple balsamic roasted brussel sprouts are a perfect holiday side dish (or anytime)! They’re vegan/vegetarian friendly and my favorite method of preparing a vegetable that often gets a bad rap!

Balsamic Maple Roasted Brussel Sprouts
Ingredients:
4 Cu. Halved Brussel Sprouts
1/2 thinly sliced Red Onion
1 TBS Chopped fresh Rosemary
3-4 Cloves Chopped Garlic
1/3 Cu. Pine Nuts (or Chestnuts, Hazelnut, Almond, Walnut)
2 TBS Extra Virgin Olive Oil
1/4 tsp Kosher Salt
Cracked Black Pepper
2 TBS Balsamic Vinegar
2 tsp Maple Syrup
