I did this tonight and I don’t think it turned out as right as it was supposed to. After 30 minutes the meat still was a little pink and it did measure at 150 degrees but I separated the veggies and put the meat back in to sit a little longer because it was just too pink for my comfort
What a very nice, well explained, and well-executed recipe you have here. I tried it with great results and with approval from my wife.
No matter what – I screw up the chops every time. ALWAYS tough!
