Really basic fried rice, I just added garlic, onions, bell peppers, cardamom, star anise, and garnished with (old) parsley.

Think you might have the wrong sub. This is rice on a plate

As already stated, this is rice on a plate. A few suggestions to improve it:
1. Make your veg knife cuts more uniform. 2. Blanch and shock some of the veg and add it towards the end for more vibrant colors. 3. Less garnish and don’t clump it all right in the center. 4. Leaving some negative space on a plate will do wonders. (and you can use some of that space to add a bit of sauce of your choosing)

* garnish with scallions instead as asians don’t use parsley. i get that you are using up old food in the fridge. if you are going to use parsley, use way less, like 1/4, and sprinkle it throughout the plate. or even toss into the rice just before plating so it’s mixed in.
* also not sure what direction (cuisine) you are going with by using both cardamom and star anise.
* for fried rice, veg cuts should ideally be squares, not strips. if the food can’t easily mix together and be eaten with a spoon, then it’s the wrong size (for fried rice).
