The spring mix you are using is rotten and I’m having trouble understanding the point other than trying to emulate putting dill/fennel fronds and beet greens on every plate.

First glance, eye-catching great color contrasts.
Upon further inspection, you need fresher greens. I’m assuming this was just a test plate so not knocking you too hard.
