Respectfully this seems wrong on so many levels. Like walls of texts wrong on technique, function, plating, finesse, etc.

I quite like the presentation of the squared rice beds. I think the combination of flavors sounds intriguing and and tasty. I would make the centerpiece smaller – I think you have the right idea of the lobster presented in a cucumber wrap, but I wouldn’t be able to eat it without making a mess. If you could somehow portion it differently (say, having two pieces instead of a larger one) I think it would go a long way. Especially if it can be more tightly packed. I could even imagine something that looks more mosaic from the top. Could be stunning.
The plate has a few too many bits and pieces scattered on it. Clearing away some of it away would give the plate a very sharp, appealing look.
I think this is going in a good direction. It sounds delicious. I don’t know if you want to keep experimenting with this dish’s presentation, but if you do I look forward to it!

There are so many horrific flavour combinations here I don’t even know where to start.
i would maybe do 3 identical „sushi“ that are each their own perfect bite. the square rice doesnt work imo. maybe if you build the whole thing in a metal square (english isnt my first language) and make sure that the lobster, cucumber and mango layer are also square it could look more appetizing. then pipe a drop of your wasabi on top and garnish with the zest. which i would swap to something other than orange.
