    This feels like two separate dishes. It doesn’t assert as a unified plate. The carrot element is very IG-able don’t get me wrong.

    While I agree with the prior post stating that the dish doesn’t seem wholly composed, THOSE CARROTS ARE GENIUS. The way you reconstructed a ‘carrot’ out of deconstructed carrots in various forms, all with a unique mouthfeel and presumably different nuances to the seasonings and taste, is purely magical and I’m probably going to end up doing something derivative if you don’t mind.

    I think several of the carrot components here may fall into the category of, “Just-because-you-can-doesn’t-mean-you-should.” I love carrots, but I wonder if all of the different preparations are really necessary. When I see a plate like this, one of the first things that comes to my mind is that everything took so long to plate that it’s probably not going to be hot.

    You’re doing to much and lacking on execution which is severely undermining the integrity and beauty of your dish.

    Duck seems overcooked and dry. Definitely not the star of the show on this plate which it should be. For a pictures sake you can always brush the protein with butter or oil to make it shiny.

    Your puree is not smooth enough and in turn the dots on your plate look grainy and sloppy.

    I rarely see a foam that I enjoy (personal preference) and I would be shocked if this foam contributed anything much to your dish flavor wise, and it certainly isn’t doing much visually. Seems like it’s there to show us how clever you are.

    The carrots are cute if a bit childish, which isn’t always a bad thing. Again they’re not executed quite smoothly enough to take it from “cool tik tok home project” to “upscale restaurant.”

    The sauce on your duck looks loose and its also pretty sloppy. Might be nice to pool it and place the duck on top instead.

    All in all it’s very disjointed, the carrot garnish don’t seem to be doing much for your duck. This should be a carrot dish, leave the duck out of it entirely.

    Carrot carpaccio as a salad app is more fitting for this.
