Tips? Aside from the couple of spots around the plate. Wanted to garnish with some watercress but could not find it!

Lamb is perfectly mid rare but the coloring of the plate is muting/dulling your work. Tzatziki and ratatouille – mound the ratatouille to elevate the lamb and be a bit more careful with the tzatziki smear. Green garnish would be a pop needed but start with a better vessel to transform your art. Thanks for sharing, Chef!

Smear through the center of the plate, put the ratatouille in the center of the smear, make more vertical and place the lamb in the center of the ratatouille to elevate it. The contrast of color with the white base with make everything else pop whereas the lamb just onto of the ratatouille are too similar in color to really highlight. Agree with other comment to add some green on top to further contrast colors.

Look cheap. Boiled meat Mushy ratatouille Try doing labne instead of yoghurt it’s so runny. Then do a sauce on top. Honestly not much of a step above something my nan would serve
