    Decent looking start to a plate, unfortunately the scoring mangled the scallop.

    As for the sear.. scallop if you need help blink twice

    Sear is a bit better on your previous plate. Are you drying it thoroughly? I feel like you maybe need a bit more oil for your initial sear

    Your pan is way too hot, you don’t want super high heat for scallops. Med+ high heat will do what you want, and shake them in the pan the moment they hit the heat to prevent sticking, it looks like yours were placed down onto a ripping hot pan, and not moved until flipping.

    Also, did you score a scallop? Or is it sliced after cooking?

    Other than that, the plate looks nice, what’s the green? Does it add to the dish or is it just decorative?
