I am making beet stained, heart shaped, duck filled, ravioli (tortellini?) for my girlfriend on Valentine’s Day. I’m going to make two tear drop dumplings and place them together to form each heart. How should I plate this dish?
I would like to incorporate a miso beurre blanc into this dish in some way.
I am going to make her a three course meal and I’m not sure what the other courses will be yet so I don’t want her to fill up on ravioli.
Sorry for my shitty drawings.

I would start by not incorporating a miso beurre blanc with a duck tortellini. That sounds absolutely terrible. Work with one or the other. I would probably stay away from making them look like hearts, but do your thing. The tortellini alone will be impressive enough without the gimmick.
I would probably stick to something clear like a duck consumé with four or five of the tortellini in a bowl. Render the duck fat so you can add drops over the consumé. It’ll look nice and add mouth feel. Maybe garnish with something green and simple. Nice chives would suffice, or fine celery greens.
