    I truly don’t understand the purpose of this dish.

    Remembering that as chefs, we make food to be easily eaten by the customer.

    So looking at this, the customer has to debone the meat, stick it on the muffin, and dip it into the poached egg?

    Or are you meant to eat it all separately? You eat the tomato muffin, then just create a dogs bowl of things to mash together and eat?

    Cmon man. The premise of the dish is great. But do the (duck) legwork and put the meat on the muffin itself
