Hope to get some feedback on this dish. It was part of a 10 course meal just for me and my partner and was the last main dish. The risotto is just made out of potatoes, firstly cooked sous vide and then infused in a broth made out of baked and burned potato skin. The rest of the dish is straight forward. The tuile is super sloppy, most broke when I stored them and the risotto was too much portion wise. Otherwise the dish was quite okay but I’m not really happy with the presentation. Any comments are greatly appreciated. The loosely theme of the menu was using ingredients that are commonly thrown away like I used potato skins in this dish.
