    To avoid being too verbose in the title:

    The base is a salad of blanched asparagus and finely chopped roasted golden beet (3rd pic). That’s dressed with chili oil, olive oil, and salt. The salad is topped with a chilled asparagus sauce, a golden beet vinaigrette, a roasted chili marmalade, raw radish, and mandarin segments.

    The mix of the veg with the puree gives a weird appearance that isn’t appealing to me. 

    The flavors seem like they wouldn’t go together.

    I’m not sure how this would eat. Seems like the textural combinations would be off putting.

    Hmm. The plating is awkward but it still looks delicious to me.

    Edit: and I’m a fairly strict carnivore.

    I’m by no means an expert. This looks really good, but when platings look perfectly uniform and circular, it looks like a lunchlady scooped it out with an ice-cream scoop. Just my opinion from the outside looking in.
