Turkish KOFTE & PIDE Kebab: Perfect Iftar Meal for Ramadan. On our first iftar I bring two all time favorites to one dish: Ramadan pide and Turkish kofte! We call this “Köfteli Pide” meaning köfte with pide base. It is similar to iskender and perfect to use any leftover breads or pides. But I’ll be using fresh pide that will make as well.

Ingredients for Kofte Mix:
1 medium size onion
500gr. beef or mix of beef and lamb
1 tsp each black pepper, paprika, cumin
1+1/2 tsp salt
1/2 tsp baking soda
3/4 cup bread crumbs
about 1/3 cup cold water

For the Ramadan and small pide dough:
First mix:
1/2 cup lukewarm water
20gr. fresh yeast or 1 tbsp dry active yeast
1 tbsp sugar after 5 minutes
1/2 cup lukewarm milk + 3/4 cup warm water
5 cups bread or all-purpose flour
1-2 cups whole wheat flour (its optional, you can use only all-purpose if you prefer)
2+1/2 tsp salt
2 tbsp olive oil to get the dough
For the egg wash:
1 egg yolk
2 tbsp milk or yogurt
2 tbsp olive oil
sesame and nigella seeds

We are making Turkish Köfte  with Pide “Köfteli Pide” Ramadan Mubarak my friends! Welcome  to my kitchen! We are famous with our   spicy juicy Turkish Köfte. Especially during  Ramadan, we make Ramadan Pide. In this episode, I’m going to also do one big and some small. And

We are going to use it to make our main dish. If you know İskender Kebab, it is very  similar. We are going to use soft pides as a base, soak it with tomato sauce, place juicy  Turkish Köftes, serve it with grilled peppers,  

Tomatoes and Turkish yogurt. I’m sure it’s  going to be your new favorite. Let’s make it! To make the pide, to my mixing bowl I added 1 cup  lukewarm water and 20 grams fresh yeast. You can also add 1  

Tspoon dry yeast and 1 tbspoon sugar. Wait for  about 5 minutes to activate and add half cup   warm milk and 3/4 of a cup warm water. First I added  five cups of allpurpose flour or bread flour and 1 and  

1/2 cup of whole wheat flour. And after mixing  a little bit, added 2 and 1/2 teaspoon salt add   more flour until it is somewhat sticking at the  bottom. Because we want a soft, smooth dough. Drizzle  

Some olive oil to take out the dough smoothly. Shape into a bowl, cover and let it rest until doubles. To make the köfte, mixture I’m using  my food processor. You can also do   it by hand first going to chop one  big size onion. If you’re not using  

Food processor, just grate with a grater. Adding 500 grams mix of lamp and beef, ground beef, teaspoon black pepper, same amount paprika and cumin. Added about the teaspoon  salt and going to mix everything. And to the mixture to give  a springy texture, I’m adding half a  

Teaspoon of baking soda and here I have 3/4 of a cup  bread crumbs. I added gradually and mixed well again. Next I’m adding 1/3 of a  cup cold water and going to mix   again and at this point, check the  mixture again if it can hold its  

Shape add a bit more bread crumbs. Pulse couple of more times and our köfte mix is ready. Rest the mixture in the fridge at least   for an hour or overnight which  will help all the flavors melt

Together. My köfte dough is resting in the fridge. My pide dough rises well. So I’m going to shape   it. Today I would like to shape one  big pide and four small ones for the pideli

Köfte. Take out the dough into lightly flowered counter  top and cut into two first. One is a bit smaller to   make the one big size pide and the other one I cut  into four sections to make four small [Music]

Pides. You’re going to rest those and it  can stick again to the bottom. So I’m going   to add wheat brand to my trays and going  to place down there and rest for 15 more minutes. I said 15 minutes but it can change  

Depends on the temperature of your  kitchen. So mine took at least 30 minutes. If you like you can roll with a rolling   pin to stretch a little bit or use  your hand to keep the air bubbles inside. I have vegetable oil here. I’m going  to dip my hands to get some bowl, half  

A lemon size let’s say. It’s up  to you and I’m going to shape it   into very thin köftes, because it’s going to  shrink when it cooks. So we want it to be thin. Before shaping the dough piece, squeezing  it in your palm helps to create more evenly sided

Köfte. I forgot to add chopped parsley.  It’s optional, so I added later to the   half of the mixture. Give it a knead  and continue to shape all of the mixture. Meanwhile, my dough has risen for the  the second time. I’m preparing my egg wash with  

One egg yolk, two tablespoon milk or yogurt  and same amount vegetable or olive oil. Let   me note that your nails needs to be  short to make this shape or you can   use disposable gloves and as you can see  I get from the egg wash to my hands and  

Shape it with the sides of my finger. And from  about 45° angle. Continue to press to create these cushion-like diamond shapes. Going to do  the same for the smaller ones and the second   hint would be while I’m shaping I also  stretch the pides a little bit to open up

More. Before begin to shape, make sure your oven  is preheated to 230 40 c°. S prinkle some sesame   seeds and nigella seeds if you like. And bake  until a nice golden color. You might need to  

Switch the trays in the oven to bake evenly. I decided to make rice piav as a side dish.  Normally you don’t need it, because we have a  pide base, but I’m going to serve it alternately with  

The rice pilav as well. To drizzle over our  pide base, I’m making tomato sauce. I melted some   butter added a little bit of vegetable oil, adding  two tablespoon tomato paste and after sautéing   added some water and stir until smooth. We want  a little bit thick sauce not too runny or either Thick. So everything is ready. We can begin to  cook the köftes and serve my griddle, cast   iron griddle is hot. I lightly  drizzled some oil and begin to cook. The heat should be about medium-high  not too low and within 1 2 minutes it will  

Releases itself. You can turn it over press  a little bit from the sides and continue to   cook the other side. I added some peppers  to the sides to grill together. It takes   about 2-3 minutes for the köftes to  cook. It can change, you can cut one  

From the half and uh check inside. And  don’t overcook, otherwise it will be dry. I’m cutting one small pide into cubes and I have  this a traditional copper pan going to serve it here. And as a final touch, I’m going to  serve some tomatoes. So just heat it up  

A little bit on the griddle. Here are  the köftes, grilled tomatoes and my tomato sauce. So first I’m going to drizzle the tomato  sauce over the pides and next top it with köftes. You can serve rice piav on the side. I just  added the peppers and tomatoes and to other  

Side. I placed a gallop of full fat Turkish yogurt  and final touch good amount of sizzling melted butter. So my friends this is it! It smells  absolutely delicious! And the köfte mixture was   really nice. It cooked in no time. I cannot  taste because it’s Ramadan. Just made it

  5. my recommendation for the bread is to use “roomal” instead of egg. It’s a paste made of flour, baking soda, and water used on Iranian Barbari bread.
