Roast chicken, golden beet, radish greens, mushroom onion ‘gravy’, and carrot puree

    Always open to feedback! Roast a half chicken and took out a section of the breast, par boiled the beets then tossed in oil and roast to crisp, cardamom ginger honey in the carrot puree, radish greens quickly sauteed with fat from the chicken while it was resting, and the mushroom and onion simmered in chicken stock with tarragon until super soft. I was thinking classic roast chicken flavors but trying to plate it nice, I think it still looks a bit rough?

    I wish the gravy was more sauce, less squidge
