I love how this dish looks but always want to improve or gain insight. FTR, wasn’t staged- each one comes up to the pass just like this.

Pan-roasted redfish
Green garlic salsa verde
English, snap peas
Baby artichokes (sous vide w/ lots of lemon and evo, light color in the pan on pickup)
Pea shoots and tendrils
Charred lemon- there isn’t any acid in the salsa verde fyi

    home cook here who can’t plate to save my life, so take this for what it’s worth—I feel like that filet looks gorgeous under there, but it’s covered up by the greens. maybe showcase it a little more?
