    What are the cubes? The purée is to thick ….. if you are gonna plate a octo like this you want the lower part of the tentacle for the curl. Clean up the ends looks like someone took a bite to break it.

    I fundamentally don’t understand this dish. The flavours, the textures, the weird cuts on the octopus. None of it makes any sense.

  4. It’s always a challenge to make octopus look good but in this instance I’d probably slice it before spreading across the pumpkin.
