  1. To be honest I don’t really want a cake that looks like the business end of a Smurfette fleshlight

I also don’t want an entire unpitted cherry on my plate in a restaurant

  2. Is it free range organic and locally sourced fd&c blue 12 cake

  3. dual-ity

I feel there is a bit too much empty space, so perhaps a bowl or platter may serve you better? Looks good though!

Why did you make the petit gateau blue if the flavor is supposed to be lemon raspberry? That blue doesn’t fit with anything else on the plate. I’m sure everything you have there tastes great, but it doesn’t feel like it’s arranged (or colored) in a cohesive way. I might suggest getting a smaller plate, using a different color for the gateau, and plating everything closer together so it feels like it belongs together. For a plating example, using the same ideas you used: you could put the gateau on the coulis (top wide end of the swoosh), slice the blackberries in half and maybe pit and halve the cherry (both fruits look nicer when halved with the inside facing outward) and place a couple leaning against the gateau and a couple along the coulis, and place the praline/sorbet along the inside middle of the swoosh–not actually on top of the coulis, just touching the inside edge. Personally, I would play with the plating more. You have some fun elements that deserve to stand out but also need to lift each other up.

I like it, although I would like it way more without the coulis streak, and the cake placed about there. The coulis could be made into gel then drops on the cake garnished with the (cut, de-pited) berries

I was told in culinary school never to make anything blue as there’s no naturally blue foods… but that looks good.

I peed over one of those in my urinal this morning!

Just here for the hate, the concept is nice! I think you can push it even further with more elements. I feel there is no cohesiveness to it. The cake in itself is too weird to stand alone, maybe add some spungecake, some green and get it thighter? I feel like it should be a blue monolith standing out in a sea of other elements.
    Anyway, great work chef!

looks elegant, sounds delicious. maybe some kinda sauce in the middle to bring it together.
