What’s the chutney and herbs? The focaccia is lacking a good crust and I would recommend to use a hot knife for your liver mousse. Maybe turn the focaccia into a crumb/crostini/croutons of sorts as the dish is all soft textures. Personally don’t mind the balsamic as it’s just 1 of many possible components that go well with liver and bread. Mousse’s are great to rocher as well.
