    What is the white thingy on the scallops? And what are the fake scallops made off?

    The white thing on top of the scallops are unnecessary. Without it, you plating would be even better.

    Remove the lardo and add something orange or yellow to make it spark

    With the color combo I don’t know if a white plate was the way to go. Also, and this is just a personal pet peeve of mine, the pure should be a proper circle to make the negative space “cleaner” looking. Using the “bowl” part of the spoon not the tip makes it easy to get nice circles. In place of Lardo you could also possibly do compressed leek rings to lean more into the everything is a circle theme you’ve got going on.

  5. Add some fresh parsley or whatever herbs flowing out on the sides to give it more texture and make it look more like a wreath and give it more texture instead of looking like blob! The colours are nice!
