Roasted aubergine salad with homemade mayonnaise and red onion. I take this dish very seriously. 😅 I even have a special wooden knife dedicated solely to chopping the aubergine once it’s cooked.

That’s very close or maybe possibly identical to a Greek variety of eggplant dip. I can’t get enough of the stuff… smoky, creamy, salty and sour, it goes well on top of anything! Being obsessed with it makes total sense to me.
